Low Fat Omelet
2 egg yolks
5 egg whites
2 tablespoons non-fat half and half
1/8 teaspoon salt
4 ounces low-fat cream cheese
1 cup crushed pineapple, drained
Mix cream cheese and pineapple, being sure pineapple is well drained. Use cooking spray to lightly coat a 10-inch frying pan. Whip eggs, salt and half and half until frothy. Set heat to medium low, as you want the omelet to cook slowly. Pour egg mixture into pan and cover.
When eggs are set, spread half of the omelet with the cheese mixture and flip the other half over it. Wait 1 minute to let the cream cheese melt. Enjoy with toast or a bagel.
Neiman-Marcus Cookies
2 cups butter
24 oz. Chocolate Chips
4 Cups flour
2 Cups Brown Sugar
2 tsp. soda
1 tsp. salt
2 cups sugar
1 8oz. Hershey Bar (Grated)
5 cups blended oatmeal
4 eggs
2 tsp. Baking powder
2 tsp. vanilla
3 cups chopped nuts (your choice)
Measure oatmeal, and blend in a blender to a fine powder. Cream the butter and both sugars. Add eggs and vanilla, mix together with flour, oatmeal, sal, baking powder, and soda. Add Chocolate Chips, Hersey Bar, and nuts. Roll into balls, and place two inches apart on a cookie sheet.
Bake for 10 minutest at 375 degrees. Makes 112 cookies
